So on Instagram every night I usually post a picture of the dinner that I have made. I decided to start doing it to give others ideas for dinner, because it’s tough to constantly be trying to come up with meals!! It’s turned into a really fun thing for me and the response has been AWESOME! With so many people requesting that I share some of my recipes I have finally caved…
These are some of my favorite meals to make. They range from mildly difficult (let’s be real I can’t cook anything super difficult) to really really easy! BUT they are all really tasty, because that is the main thing I’m going for whenever I make dinner!
Crockpot Salsa Tacos
K super basic super easy, you need:
- black beans
- taco seasoning
- shredded cheese
- sour cream
You place the chicken in the crockpot, sprinkle taco seasoning on top, add the salsa + black beans, (if I remember I’ll add cheese on top) and wa-la let it be in the crockpot for a few hours. About 20 or so minutes before you are planning on eating, take the chicken out and shred it with two forks or your fingers. Place it back in the crockpot and stir it all together. Put it on a tortilla, add some cheese and sour cream! Easy delicious and so yummy!
Sooo when I was younger and my family would go to Sizzler, this was what I would get EVERY TIME. When I found this recipe I was way excited to test it out. I found this one on Pinterest and I really like it, however, when I make the sauce I add wayyyyy less grey poupon mustard and a little more honey/mayo because if you follow the recipe as is the mustard is a little overwhelming… ok like it kinda burns your mouth… grey mustard is some INTENSE stuff.
Ok also a really easy and filling one.
- rotisserie seasoning
- 1 can cream of chicken
- Hawaiian rolls (ya know the one that comes in the orange bag??)
Alrighty so I usually throw the rice in a rice cooker because if you don’t have one I’m gonna tell you right now GET ONE! It will make your life so so much easier. Then I’ll cut up the raw chicken, add a good amount of rotisserie seasoning (this is kinda a new trick I’ve found, it makes it a lot tastier) and salt + pepper. Throw it in a pan with some olive oil and let it cook all the way through. Once it’s cooked, I take it out shred it with two forks, then put it back in the pan with the cream of chicken. Ok so some people fill the can of cream of chicken with milk and add it, I kinda just pour milk in the pan until it’s at the level of thickness/runniness that I want! Then you just put the chicken/sauce on top of the rice and serve! You can have whatever toppings you choose like shredded cheese, crunchy chow mien noodles, celery, black olives, pineapple, literally whatever you heart so desires! I also like getting those yummy Hawaiian rolls to serve with it!
Spinach Mushroom Chicken
You GUYS! This recipe will blow your mind! Well at least I hope it does. We are super big fans in this house but if you’re not super into mushrooms I can see how you might not like it! I just follow the recipe exactly and serve with some garlic + butter mashed potatoes. It’s a pretty heavy dinner so maybe do it on a Sunday!
